Ninja Easter Recipes: Carrot And Coffee Cupcakes

This Easter, take your celebrations to the next level with this delicious Carrot and Coffee Cupcakes recipe! These cupcakes are the perfect blend of sweet and savoury, combining the natural sweetness of carrots with the rich flavour of coffee. This tasty recipe is designed to be made with the Ninja 3-in-1 food processor for easy preparation and the perfect soft, fluffy texture of freshly baked cupcakes.

These flavourful cupcakes are fun to bake and are the perfect treat to share with family and friends.

Ready to start? Then, let’s get baking!

Ingredients:

·      1 Medium carrot

·      70g Self-raising flour

·      50g Oat flour

·      115g Golden caster sugar

·      55g Non-dairy spread

·      60ml Soy milk (can also use Oat milk)

·      60ml Strong brewed espresso

·      1tbsp Apple cider vinegar

·      1tsp Baking powder

·      1/3 tsp Ground ginger

·      ½ tsp Ground cinnamon

·      ¼ tsp Bicarbonate of soda

·      Pinch of Salt

Utensils & more

·      Muffin tray

·      Paper cases

·      Large mixing bowl

·      Toothpick

 

Method-

Step 1

Firstly, preheat your oven to 180°C and line a muffin tray with paper cases.

Step 2

Mix together your non-dairy milk, vinegar and coffee in a bowl, and let it sit for 5 minutes to thicken. This will create a buttermilk substitute.

Step 3

Next, start preparing your oat flour. Add 2 cups of oats into your Ninja Kitchen food processor and blend on a high setting for a few minutes until the oats turn into a fine flour. Then, store the flour in an airtight jar or container.

Step 4

In a clean food processor, attach the grating blade and use this to grate your carrot. Then, set this aside.

Step 5

Next, add your vegan butter and sugar to your food processor, and pulse to cream them together. Add your milk mixture and blend again.

Step 6

In a large mixing bowl, add all of your dry ingredients. Gently fold in the wet mixture and your grated carrot.

Step 7

Divide the batter evenly between approximately 6-7 cupcake cases and place them in the oven to bake for 20-25 minutes.

Step 8

To check if your cupcakes are ready, you can use a toothpick to pierce the centre of a cake and make sure it comes out clean. Your cupcakes should also have a golden finish.

Step 9

Leave the cupcakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.

Step 10

Once the cupcakes have cooled, you can decorate them with a simple frosting and some Mini Eggs for a fun Easter touch!
